Baking weekend

It was a snowy day on Saturday which seemed perfect to do some baking.  I started with my weekly batch of granola.  I eat it for breakfast every morning and the boys enjoy it for the occasional snack.  I use this recipe and add a bit of extra honey so it's more like granola bars than cereal.


Next up were these tasty crackers I spotted on a food blog I read occasionally.


They end up looking a bit like bird food but they taste delicious.  The boys like them as well which makes me happy because they're eating wholesome ingredients that are good for them.


Since I was on a roll, I decided to make a double batch of english muffins so we would have some in the freezer for Karsten's breakfast.  We haven't figured out how to give them as many nooks and crannies as the ones we buy at the store (perhaps more yeast), but these taste good.


And once we cleaned up the mess from all of the above, Scott got started on gumbo and cornbread for dinner. We tried this recipe that came recommended by a friend and was happy with how it turned out.  It doesn't have quite the depth of flavor as gumbo I've had at restaurants, but it was good.  The boys liked it, but didn't like the spicy hotdogs (andouille sausage).


Since we were on a baking roll, I continued the fun today with chocolate chip zuchinni bread and Carrot-Date muffins.  Since we had english muffins, these went into the freezer for future breakfast (except for a few that we had to taste test).


While we cooked, the boys had a great time playing - from trains to dinosaurs, they came up with all sorts of fun to play with each other.


We had a great day together 'like a family' as Liam would say.  We ended the night on Saturday with a movie night and watched Big Hero 6 - very cute movie, we and the boys really liked it.
